
Neil Watson our cheese maker, has been making this signature cheese for over 30 years. The Lidsdale is unique and handmade. Pictured above in 2012 at the Melbourne specialty cheesemakers cheese show. In which he won the champion goats cheese with the Buche Noir. Neil matures the Lidsdale for 6 to 12 months. It gets more robust with a longer palette with age. This is a unique tasty cheese. Natural flavours come through like an aged red wine. You can order a whole wheel if you contact directly . Wheels come in 2 to 3 kg rounds . Wrapped in muslin and vac sealed or buy in small units on the web site shop. A great cheese to experiment with. Work out creative ways to use this cheese in dishes of your own making.- Sweet fresh fruit go well with this cheese or sweet home made jams .
We use no fillers in our products or preservatives – all our products including the Lidsdale are exceptional products.
With the Lidsdale cheese -(called the Cheddar Chѐvre (Goat) till 2016). Neil heats the curd to make a firmer cheese. It is semi hard, pure goats milk, an aged white goat cheese.
