Information & tasting notes
This cheese started to stand out in 2001. It develops robust flavour as it matures with a beautiful lengthening of palette. Ripened with a white mold the cheese has characteristic blue undertones but no blue mold is added. This cheese was named after a book about the Western Coal Miners written by our late neighbour Mr Jim Brown.
We thought it appropriate at the time because the cheese used to bend over like the bent back’s of the hard working coal miners. The mold is ancient looking like the inside of mountains. White mold is a living organism too growing like a stalagmite but in its case into the cheese to create our unique award winning champion cheese
Bent Back Chèvre is individually wrapped in cheese foil and usually weighs out from 175gm to 185gm. It is a cone pyramid shape.
